What I Ate Wednesday: Oct 14, 2015

It’s been over a month since I did a WIAW, and believe it or not, I did not have a green smoothie for breakfast today!

Breakfast: Pumpkin Smoothie

I swear I didn’t add greens to this! 🙂 Vega One contains greens powder, so that is where this vitamin-A-packed smoothie gets its green hue. This smoothie contains unsweetened almond milk, canned pumpkin, banana, Coconut Almond Vega One and some pumpkin pie spice. YUM.

Morning Snack: Blueberry Oatmeal

Lunch: Office Freebies (whole-wheat pita with hummus, veggies, fruit and yogurt)

We had our kick-off meeting for the physical activity challenge my office is having–we provided some healthful goodies to our challenge participants and I took advantage! LOVE having a plate full of fruits and veggies like this, such a beautiful sight!

Far from glamorous, but nutritious and satisfying! We made homemade pizza the other night with dough from Whole Foods, canned pizza sauce, vegan pepperoni and mozzarella! It was DELICIOUS. Salad includes romaine, cabbage, black beans, cilantro and spicy peanut vinaigrette.

This is my favorite beverage of the moment! Honestly I’m sucking down water all day long and typically don’t get bored with it. Sometimes though, especially when I’m making dinner, I like to have something else to drink–sometimes that’s wine, sometimes that’s beer. This refreshing drink is super simple and tasty and satisfies my craving for “something else to drink”: club soda and a splash of lime juice! It’s like a totally natural lime soda!

Dessert: Chocolatey Concoction

It’s National Dessert Day! I’m not much of a baker–don’t get me wrong, I have one heck of a sweet tooth, but I don’t have the patience for baking–it requires exact measuring and doesn’t leave much room for creativity. Surprisingly, this delectable result occurred from throwing random ingredients into a mixing bowl and baking it for an unknown amount of time. I can’t give you amounts, but here is a list of ingredients in order of approximate quantity: whole wheat pastry flour, almond milk, canola oil, dark cocoa, cacao, maple syrup, flax seed, brown sugar, powdered peanut butter, salt, baking powder. It is amazing served warm and topped with banana ice cream!
