No green smoothie? Gasp! We are out of Vega One for the moment so I decided to mix it up with one of my old-school favorites!
Morning Snack: Soy Latte
Bonus: used my free drink reward, yes!
Lunch: Baja Salad
I grabbed lunch with coworkers and went to local place I’d never been. This salad was super tasty and satisfying. Arugula + romaine, jicama, black beans, tomatoes, grilled veggies, pickled onion, avocado and tortilla strips with an avocado lime dressing.
Afternoon Snack: Dark Chocolate + Tea

Dinner: Leftovers–Breakfast Casserole + Korean BBQ w/ Veggies
Super random mix of food, but we are heading to Colorado in a couple days for a long weekend of backpacking and concert-going so I am trying to clean out the fridge! This was actually a really satisfying meal after coming home from the gym. The breakfast casserole included potatoes, tofu, vegan cheese and vegan ‘crumbles’. The Korean BBQ was a frozen plant-based meat product plus broccoli and stir-fried zucchini and onions. I also cracked open a refreshing Summer Shandy to go with my dinner.
